Split Pea with Ham Soup

Ingredients:

4 large carrots, cut into small cube

3 stalks celery, chopped

1 large onion, chopped

2 potatoes cut into cubes

1-1//2 cups of yellow split pea

1 tsp Salt (to taste)

1 tsp Black pepper (to taste)

3 litres of ham bone broth

300gm ham, cubes

A bunch of thyme

2 bay leaf

Freshly chopped parsley for garnish

Directions:

  1. In a large pot over high heat, add water and ham bone, thyme, bay leave and pepper to boil for 45 mins to an hour.

  2. Remove ham bone and remove whatever ham meat on the bone and return bone to the pot for continuous boiling. Cut the meat to small cute and set aside.

  3. Add carrots, celery, onion and split peas into the boiling pot and let the broth boil again. Then add potatoes and continue to let the broth boil and lower the heat and simmer for another 45 minutes.

  4. Then add all the ham into the pot and let it simmer for a further 30 minutes for until the split peas is cooked through. At this point, you may decide to add additional salt if required.

  5. Let the soup rest for 15 minutes and garnish with parsley before serving.
