Greek Salad

Ingredients:

1 cups of cherry tomatoes, halfed

1 cucumber or 3/4 English cucumber, cubed

1/2 of green/red/yellow bell peppers, cubed

1 medium red onion, thinly slice

1/2 cup Greek pitted Kalamata olives

Salt and pepper to taste

4 tbsp quality extra virgin olive oil

1–2 tbsp red wine vinegar

1/2 block of Greek feta (crumble) or a good amount to your liking

1/2 tbsp fresh or dried oregano

1/2 tbsp fresh or dried dill

2 tbsp lemon juice

3 gloves of garlic, minced


Instructions:

Whisk the olive oil, lemon juice, garlic, vinegar, oregano, and dill together until blended. Season to taste with salt and freshly ground black pepper.


This can be prepared 3 hours ahead. Let stand at room temperature. Re-whisk before using.


2 Combine salad ingredients:

Combine the tomatoes, cucumber, onion, bell pepper, olives in a bowl. Toss with dressing. Sprinkle with feta cheese and serve.
