Ingredients:
5 pounds of tomatoes
2 tbsp olive oil
3 gloves minced garlic
1 cup of onion, finely chopped
2-3 sprig of basil, finely chopped
3/4 tsp salt
3/4 tsp black pepper
Instructions:
Bring a large pot of water to a boil and add tomatoes to the pot and let it boil for about 5 mins.
Discard water and transfer tomatoes to cold water and peel the skin of tomatoes and save the flesh in a bowl.
In a large sauce pan, add olive oil and garlic and onion and sauteed till onion is translucent. Add basil and continue to saute for another minute. Add tomatoes into the mix and being the tomato sauce to a boil. At this point, you may add salt and pepper (adjust to taste), low the heat and let the sauce simmer for another 30 mins or until the sauce is thicken.
The tomato sauce will keep up to 5 days in the refrigerator or you may can it as per canning process.
