Ingredients:
1 1/2 pound ground beef
1 onion diced
2 carrots diced
3 ribs of celery diced
1/4 head of cabbage, thinly sliced
2 potatoes diced
1 can of baked bean (or barley)
1 can diced tomatoes
3 cups of water
1 bay leave
1 tablespoon parsley
1 teaspoon of thyme
1 tablespoon minced garlic
2 tablespoon of olive oil
ground black pepper to taste
salt to taste
Directions:
Heat olive oil in a large soup pot over medium-high heat. Add ground beef and fry until almost dry then add garlic into beef and continue to fry until beef is evenly browned.
Add onion and continue to stir for few mins then add carrot, celery, cabbage, potatoes, baked beans, tomatoes and water.
Season with bay leave, parsley, thyme, black pepper and add salt to taste.
Bring to a boil, reduce heat and cover, simmer for 2 hours, stir frequently and remove bay leave before serving.
