Almond Florentine



Ingredients:

  • 2 cups sliced almond

  • 1/4 cup unsalted butter

  • 1/3 cup of heavy whipped cream

  • 2 tbsp honey

  • 3/4 cup sugar

  • 1/2 tsp of salt

  • 2 tbsp all purpose flour

  • 1/2 cups orange zest

  • 1/2 tsp vanilla extract

  • 8 oz melted bittersweet chocolate

Instructions:

Place rack in center of oven and preheat oven to 350 degree. Prepare parchment paper on a large baking sheet and set aside

In a medium sauce pan, heat butter, sugar, salt, whip cream and honey. Bring the mixture to a boil until the sugar is dissolved. Add flour, sliced almond, orange zest and vanilla extract, bring to a boil and remove from heat

Drop 1 round tsp batter onto the prepare baking sheet. Repeat with more batter, spacing the cookies at least 2 inches apart. Bake for 8-10 mins until the cookies is golden brown. Allow cookies to cool on baking sheet for 5 minutes then transfer to cooling rack. Continue making the cookies in same manner using a fresh sheet of parchment paper each time.

Put chocolate in a heatproof bowl. Bring a saucepan with 1 inch of water to a low simmer. Place the bowl over but not touching the water. Stirring frequently, until chocolate is melted and smooth. Remove from the heat.

For chocolate decor:

You can use white or dark chocolate or both. You can put dark on the bottom and white on the top or put both as a drizzle just on top.
