Penne with Sausage Puttanesca sauce



Ingredients:

  • 1 lb. Penne

  • 5 links Italian sausage, casings removed and sliced

  • 1 tablespoon extra virgin olive oil

  • 1/2 cup onion, chopped

  • 3 gloves garlic, minced

  • 1 can diced tomatoes

  • 1/4 cup tomato paste

  • 1/2 cup red wine

  • 10-12 pieces kalamata olives, pitted and diced

  • 2 tablespoon capers

  • 1/2 tablespoon of oregano

  • 1/2 teaspoon of dry chilli flakes

  • 1/2 cup of fresh parsley finely chopped

  • Salt and fresh ground pepper to taste

Instructions:

  • Heat 1 tablespoon oil in a skillet, add the sausage and saute until the meat is cooked through and no longer pink. Remove sausage from skillet.

  • In the same skillet, add the onion and garlic to saute until onions start to turn translucent. Then add olives, capers, chilli flakes and oregano and continue to saute for another 1-2 mins.

  • Add diced tomato and tomatoes paste and stir well, then add the cooked sausage.

  • Simmer on low heat for another 10-15 minutes.

  • Cook penne pasta as per package directions; drain water.

  • Pour penne over the sauce and toss; coating all of the pasta and serve with fresh parsley.​
